Description

A vibrant and flavorful dish featuring fresh spinach sautéed with tangy feta cheese, enhanced by a zesty lemon-olive oil dressing. Chopped green onions and mashed garlic add a savory kick, making this a healthy and delicious Mediterranean-inspired side or light meal.


Ingredients

  • 2 pounds spinach, washed and stems removed
  • 1 tbsp. garlic, mashed
  • 1 cup feta cheese, crumbled
  • 1/2 cup extra virgin olive oil 
  • 1/2 cup freshly squeezed lemon juice
  • 3 green onions, chopped
  • Salt, to taste

Instructions

  1. Boil the spinach in 1 cup of water for about 10 minutes, stirring occasionally
  2. Drain thoroughly in a colander
  3. In a mixing bowl, combine the spinach, garlic, olive oil, lemon juice, green onions, and feta
  4. Serve warm with crusty bread for sopping up the juices.
