- 1 tbsp. garlic, mashed
- 1 cup feta cheese, crumbled
- 1/2 cup extra virgin olive oil
- 1/2 cup freshly squeezed lemon juice
- 3 green onions, chopped
- Salt, to taste
Instructions
- Boil the spinach in 1 cup of water for about 10 minutes, stirring occasionally
- Drain thoroughly in a colander
- In a mixing bowl, combine the spinach, garlic, olive oil, lemon juice, green onions, and feta
