4 bone-in, skin-on chicken thighs

2 medium zucchinis, sliced

1 red bell pepper, sliced

1 red onion, quartered
1 cup cherry tomatoes

2 large carrots, chopped

2 medium potatoes, cubed

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1 teaspoon dried rosemary

Juice of 1 lemon

Salt and pepper to taste


Instructions

Step By Step Instructions 

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the zucchini, bell pepper, onion, cherry tomatoes, carrots, and potatoes with 2 tablespoons olive oil, garlic, oregano, rosemary, salt, and pepper.

  3. Place seasoned vegetables on a large sheet pan in a single layer.

  4. Rub chicken thighs with the remaining 1 tablespoon olive oil, paprika, lemon juice, salt, and pepper.

  5. Nestle the seasoned chicken thighs among the vegetables on the sheet pan.

  6. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

  7. Optional: Broil for an additional 2-3 minutes for crispy skin.

  8. Remove from oven, garnish with fresh herbs if desired, and serve hot.

Notes

  • For extra crispy skin, broil the sheet pan chicken thighs and veggies for the last 2-3 minutes of baking.
  • You can substitute chicken thighs with boneless, skinless chicken breasts — reduce cooking time accordingly.
  • Serve with quinoa, couscous, or a fresh side salad for a complete Mediterranean meal.
