Description
This simple but delicious rigatoni and shrimp recipe combines perfectly cooked pasta with golden seared shrimp in a light, flavorful Mediterranean sauce. It’s easy enough for weeknight dinners but special enough for entertaining.
Ingredients
1 lb rigatoni pasta
1½ lbs large shrimp, peeled and deveined
¼ cup extra virgin olive oil
6 cloves garlic, minced
1 medium shallot, finely diced
1 cup cherry tomatoes, halved
½ cup fresh basil leaves, torn
¼ cup fresh parsley, chopped
Zest and juice of 1 lemon
½ cup grated Parmesan cheese
Salt and freshly cracked black pepper to taste
Instructions
Cook rigatoni in well-salted water until al dente, reserve 1 cup pasta water
Heat olive oil, cook shallot until clear, add garlic until fragrant
Add shrimp, cook 2-3 minutes per side until golden
Add cherry tomatoes, then drained pasta with reserved water as needed
Remove from heat, toss with lemon, herbs, and Parmesan
Serve your rigatoni and shrimp immediately while hot
Notes
- Don’t overcook the shrimp – they cook fast and get rubbery if overdone
- Save some pasta water to help create the perfect sauce consistency
- Fresh herbs make a huge difference in the final flavor
