2 tbsp olive oil
1 large yellow onion, diced
1 red bell pepper, chopped
4 cloves garlic, minced
1 lb ground lamb
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground coriander
1/2 tsp ground cinnamon
1/4 tsp allspice
1/4 tsp cayenne pepper
1 can (28 oz) crushed tomatoes
1/2 tsp sugar
6-8 fresh eggs
1/4 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Warm pita bread for serving
Instructions
Cook ground lamb with spices until browned, remove and set aside
Sauté onions and bell pepper in same pan until soft
Add garlic and remaining spices, cook until fragrant
Add crushed tomatoes and sugar, simmer until thickened
Return lamb to sauce, mix well
Create wells in sauce and crack eggs into each well
Cover and cook until egg whites are set but yolks remain runny
Garnish with feta and parsley, serve with warm bread
