Description

Easy Greek Chicken Tzatziki Wrap. Fresh, healthy, and way better than any restaurant version.


Ingredients

For the Chicken:

1.5 lbs chicken thighs (trust me, thighs are better)

1/4 cup olive oil

3 garlic cloves, chopped up

2 tablespoons lemon juice

1 tablespoon oregano

Salt and pepper

For the Tzatziki:

2 cups Greek yogurt (get the good stuff)

1 big cucumber

3 garlic cloves

2 tablespoons olive oil

Fresh dill (about 2 tablespoons)

1 tablespoon lemon juice

Salt

Everything Else:

4-6 pita breads

1 tomato, chopped

1/2 red onion, sliced thin

Mixed greens

Kalamata olives

Feta cheese

Fresh parsley


Instructions

Step 1: Get That Chicken Ready

Whisk all of your chicken marinade ingredients together in a bowl. Add the chicken and toss everything together until it’s completely coated. Cover it and stick it in the fridge. If you can do this the night before, great. If not, even an hour helps.

Step 2: Make the Tzatziki

Grate your cucumber and sprinkle it with salt. Place it in a strainer and let it sit for roughly 30 minutes. While that’s happening, mix everything else together in a bowl.

To get as much water out as possible, squeeze the cucumber tightly after it has drained for 30 minutes. Then mix it into your yogurt mixture. Put it in the fridge for at least an hour before using it.

Step 3: Cook the Chicken Right

Take your chicken out of the fridge 15 minutes before cooking. Heat up a pan or grill. Cook the chicken for roughly 6-7 minutes per side. You want the internal temperature to hit 165°F.Give it 5 minutes to rest, then slice it up.

Step 4: Warm Your Pita

For a perfectly warm and soft pita, you can either warm it in a dry pan for about 30 seconds per side, or wrap it in a damp paper towel and microwave it for 15 seconds.

Step 5: Build Your Greek Chicken Tzatziki Wrap

Spread tzatziki down the middle of your pita. Add chicken, tomatoes, onions, greens, olives, and feta. Don’t overfill it – you still need to be able to wrap it.

Fold the bottom up about 2 inches, then fold the sides in while rolling from bottom to top. It takes a little practice, but you’ll get it.
