Creamy, protein-rich frozen Greek yogurt bars that taste like premium ice cream bars but are made with simple, wholesome ingredients. Perfect for summer or healthy snacking any time.
Ingredients
The Basic Stuff
2 cups Greek yogurt (get the full-fat kind – trust me on this)
3-4 tablespoons honey or maple syrup (taste as you go)
1 teaspoon vanilla extract
2 tablespoons coconut oil (melted, but this is optional)
Fun Add-ins (pick whatever sounds good)
1/2 cup fresh berries – strawberries, blueberries, whatever
1/4 cup mini chocolate chips (the little ones work better)
2 tablespoons peanut butter or almond butter
Instructions
Get a bowl and add the Greek yogurt, honey, and vanilla. Mix it up until it’s smooth. If you’re using that coconut oil, make sure it’s melted but not hot – you don’t want to cook your yogurt.
Here’s something I wish someone had told me earlier – taste this mixture now. When frozen Greek yogurt bars freeze, they lose some of their sweetness, so you want it to taste just a little sweeter than you think you want.
Now fold in whatever add-ins you picked. If you’re doing berries, smash up about half of them – it makes these cool color swirls. For chocolate chips, the mini ones spread out better than big ones.
One thing I figured out after ruining a batch – if you’re adding nut butter, warm it up a tiny bit first. Otherwise, you get these weird hard chunks that nobody wants.
Pour everything into your molds, but leave a little space at the top because frozen Greek yogurt bars expand when they freeze. Stick in your popsicle sticks, or if you’re using a pan, just cover it with plastic wrap.
Let them freeze for at least 4 hours. I usually just make them the night before I want to eat them.
