4 bone-in, skinless chicken thighs

3 large yellow onions, thinly sliced

2 cups low-sodium chicken broth

1 cup uncooked Jasmine rice, rinsed

1 cup shredded Gruyère cheese (or Swiss cheese)

2 tablespoons balsamic vinegar (or apple cider vinegar)

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

Step by Step instructions 

  1. Caramelize Onions: Heat olive oil in a large pot over medium-low heat. Add sliced onions and cook, stirring occasionally, for 25-30 minutes until golden brown and caramelized.

     

  2. Add Garlic & Vinegar: Stir in minced garlic and balsamic vinegar. Cook for 2 more minutes. Remove onions and set aside.

     

  3. Sear Chicken: Season chicken with salt and pepper. In the same pot, sear chicken thighs for 2-3 minutes per side until lightly browned. Remove and set aside.

     

  4. Layer Ingredients: Add rinsed rice to the pot, stir to coat with onion remnants. Pour in broth, add bay leaf and thyme. Return onions and chicken on top.

     

  5. Simmer: Cover and cook on low heat for 25-30 minutes, or until rice is tender and chicken is cooked through.

     

  6. Cheese Finish: Sprinkle Gruyère cheese over the top. Cover until cheese melts, or bake uncovered at 375°F for 10 minutes for a bubbly top.

     

  7. Serve: Garnish with fresh parsley and serve hot.

  • Use low-sodium broth to control saltiness.
  • For alcohol-free cooking, vinegar or broth reduction substitutes work perfectly.
