French Onion Chicken Rice Casserole is a comforting one-dish meal combining tender chicken, perfectly cooked rice, and rich French onion flavors topped with melted cheese and crispy onions.
Ingredients
2 lbs rotisserie chicken, shredded
1½ cups long-grain white rice, uncooked
1 packet French onion soup mix
2 cans cream of chicken soup
1½ cups chicken broth
1 cup heavy cream
2 cups Gruyère cheese, shredded
1 large onion, sliced
3 tbsp butter
1 cup French fried onions
Instructions
Step 1: Preheat your oven to 350°F and grease a 9×13 inch baking dish. Trust me, don’t skip the greasing!
Step 2: In a large skillet, melt butter over medium-low heat. Add sliced onions and cook for 15-20 minutes, stirring occasionally, until golden brown and caramelized. This patience pays off huge in flavor.
Step 3: As the onions sauté, take the time to shred your rotisserie chicken into small, bite-sized pieces. Remove skin if you prefer.
Step 4: In In a large bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, French onion soup mix, garlic powder, and thyme until the mixture is smooth
Step 5: Layer the uncooked rice evenly in your prepared baking dish, then add shredded chicken, followed by caramelized onions.
Step 6: Pour the liquid mixture evenly over everything, making sure it reaches all corners. Cover tightly with aluminum foil.
Notes
- Never use instant rice.
- Cover tightly for proper steam cooking.
