Ingredients
What You’ll Need:
2 cups all-purpose flour, sifted
1 cup unsalted butter, softened
¾ cup granulated sugar
¼ cup brown sugar
2 large eggs
1 tsp vanilla extract
¼ cup strong coffee, cooled
2 tbsp instant espresso powder
8 oz mascarpone cheese
½ cup heavy cream
1 cup powdered sugar
Unsweetened cocoa powder for dusting
Instructions
Here’s How to Make It:
Cream butter and both sugars until light and fluffy (about 5 minutes)
Add eggs one at a time, then vanilla
Mix coffee and espresso powder in a small bowl
Alternate adding flour and coffee mixture to butter mixture
Chill dough for 1 hour
Bake at 350°F for 10-12 minutes
Cool completely before filling
Beat mascarpone until smooth, whip cream separately, fold together with powdered sugar and vanilla
Fill cookies and dust with cocoa powder
