Description

A comforting baked rigatoni dish with tender pasta tubes, creamy ricotta, and golden melted cheese—perfect for family dinners or meal prep.


Ingredients

1 pound rigatoni pasta

3 cups marinara sauce

15 oz ricotta cheese

8 oz fresh mozzarella, torn into chunks

1 cup Parmesan cheese, freshly grated

2 large eggs

3 cloves garlic, minced

1/4 cup fresh basil leaves

2 tablespoons olive oil

Salt and freshly ground pepper


Instructions

  1. Preheat oven to 375°F and butter a 9×13 inch baking dish
  2. Cook rigatoni 2 minutes less than package directions
  3. Mix ricotta, eggs, half the Parmesan, garlic, salt, and pepper
  4. Toss drained pasta with marinara, then fold in ricotta mixture
  5. Layer half pasta in dish, add half mozzarella, repeat layers
  6. Cover and bake 25 minutes, uncover and bake 15-20 minutes until golden

Notes

  • Undercook pasta by 2 minutes before baking. 
  • Can be assembled ahead and refrigerated. 
  • Add 10 minutes to baking time if starting cold. 
  • Use freshly shredded cheese for best melting.
