Description
The easiest, most delicious crock pot cabbage soup that practically makes itself. Just chop, dump, and let your slow cooker work its magic while you go live your life.
Ingredients
1 big head of green cabbage (about 2 pounds – sounds like a lot but it shrinks!)
2-3 large carrots
3-4 celery stalks
1 yellow onion (white works too)
A few garlic cloves
1 bell pepper (I usually go for red because it’s prettier)
Broth – chicken or vegetable, whatever you prefer
1 can of diced tomatoes
Tomato paste (small can is fine)
Italian seasoning, thyme, bay leaves
Olive oil, salt, pepper
Instructions
Chop everything first (I sometimes do this the night before and stick it all in the fridge)
Heat a little oil in a pan and cook the onions and garlic until they smell amazing
Dump the sautéed stuff into your slow cooker
Add all your chopped vegetables
Make sure to stir in the tomato paste; it’s a critical step that you don’t want to skip
Add the diced tomatoes and seasonings
Pour in enough broth to cover everything
Put the lid on and walk away!
Notes
- Seriously, sauté those onions first – it’s worth the extra 5 minutes
- Fish out that bay leaf before serving (learned this the hard way!)
- This crock pot cabbage soup tastes even better the next day
- Feel free to add whatever vegetables you have lurking in your fridge
- If you want it creamier, stir in some coconut milk during the last hour
