Ingredients

The Tzatziki Part (This is Where the Magic Happens)

1½ cups Greek yogurt – Don’t even think about using regular yogurt

1 large cucumber – We’re going to do something special with this

3 garlic cloves – Fresh is best, but powder works too

2 tablespoons fresh lemon juice – The bottled stuff is fine

2 tablespoons good olive oil – Splurge a little here

2 tablespoons fresh dill – Or 1 tablespoon dried if that’s what you have

1 teaspoon salt

½ teaspoon black pepper

The Chicken Part (Keep It Simple)

1½ pounds chicken – Thighs or breasts, whatever you like

¼ cup olive oil

3 tablespoons lemon juice

2 teaspoons dried oregano – This is what makes it taste Greek

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika – For that nice color

Instructions

Step 1: Deal with the Cucumber First (This is Important!)

  1. Grate your cucumber using the big holes on a cheese grater

  2. Put it in a strainer and sprinkle with salt

  3. Let it sit for 30 minutes, then squeeze it in a clean kitchen towel

Step 2: Mix Everything Together (Easy Part)

  1. Put the Greek yogurt in a bowl

  2. Add the squeezed cucumber, minced garlic, lemon juice, and olive oil

  3. Stir in the dill, salt, and pepper

  4. Taste it and add more of whatever you think it needs

  5. Stick it in the fridge for at least an hour
