Description

This fresh and vibrant caprese pasta salad tortellini blends tender cheese tortellini with cherry tomatoes, basil, mozzarella, and Mediterranean favorites like olives and sun-dried tomatoes—all tossed in a rich olive oil and balsamic glaze. A chilled, hearty, and easy summer dish everyone will love!

  • 20 oz cheese tortellini (fresh or refrigerated)
  • 2 cups cherry tomatoes, halved
  • 8 oz mozzarella balls (bocconcini or ciliegine)
  • 1 cup fresh basil leaves, torn
  • ½ cup kalamata olives, pitted and halved
  • ¾ cup marinated artichoke hearts, chopped
  • ½ cup sun-dried tomatoes, sliced
  • ⅓ cup extra virgin olive oil
  • 2 tbsp balsamic glaze (or 1 tbsp balsamic vinegar)
  • Salt and pepper, to taste
  • ½ tsp garlic powder (optional)
  • Pinch of red pepper flakes (optional)

Instructions

Step by Step Instructions:

  1. Cook tortellini in salted water according to package directions (about 3–4 minutes). Drain and rinse with cold water to stop cooking.

     

  2. Prep vegetables: Halve tomatoes, slice sun-dried tomatoes, chop artichokes, and tear basil.

     

  3. In a large bowl, combine tortellini, mozzarella, tomatoes, basil, olives, artichokes, and sun-dried tomatoes.

     

  4. Whisk together dressing: olive oil, balsamic glaze, garlic powder, salt, pepper, and red pepper flakes (optional).

     

  5. Pour dressing over salad and gently toss until fully coated.

     

  6. Chill for 30 minutes before serving. Garnish with extra basil and a drizzle of balsamic glaze if desired.

  • Use refrigerated or fresh tortellini, not dried.
  • Add grilled chicken or pine nuts for extra protein and crunch.
