Description

Caprese Pasta Salad Orzo is a quick, fresh, and flavorful Mediterranean-inspired dish combining tender orzo pasta, sweet cherry tomatoes, creamy mozzarella, and aromatic basil. Finished with a drizzle of balsamic glaze, this cold pasta salad is perfect for picnics, BBQs, or weekly meal prep.

1 cup dry orzo pasta
1 cup cherry tomatoes, halved
¾ cup mozzarella pearls
¼ cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze
Salt and black pepper to taste


Instructions

 

  1. Bring a large pot of salted water to a boil. Add orzo and cook until al dente (7–10 minutes).

     

  2. Drain and rinse the orzo under cold water. Let it cool completely.

     

  3. In a large mixing bowl, combine orzo, halved cherry tomatoes, mozzarella pearls, and torn basil.

     

  4. Drizzle with olive oil and balsamic glaze.

     

  5. Season with salt and black pepper to taste.

     

  6. Toss gently until well mixed. Refrigerate for at least 30 minutes before serving.

Notes

  • For added protein, toss in grilled chicken, chickpeas, or white beans.
  • Use gluten-free orzo if needed.
  • Add lemon zest or garlic-infused olive oil to boost flavor.
